Low Carb Zoodle alla Carbonara


I love creamy sauces like alfredo or carbonara but I don't like how heavy it is with regular pasta. When I have a thick and creamy sauce I like to use my favorite pasta substitute the zoodle. Since all of the ingredients to make the carbonara sauce is low carb I decided to make it with my zoodles. Carbonara is a creamy sauce made from eggs and cheese with the addition of bacon or pancetta.


It is one of my favorite "pasta" dishes because it is super easy to do. Since you don't have to boil the zoodles it is also quick and a one pan meal. All you have to do is cook some pancetta and then add your zoodles. Mix some eggs and cheese and drizzle into the zoodles and pancetta. It's amazing how creamy the combination of eggs and cheese make this dish.


Low Carb Zoodle alla Carbonara (printable recipe)
  • 1/2 tablespoon olive oil
  • 4 ounces pancetta, cut into 1/4-inch dice
  • 1 clove garlic
  • 4 zucchini 
  • 2 large eggs, room temperature
  • 3/4 cup grated Parmesan
  • Freshly ground black pepper
  1. Clean the zucchini really well and slice off the top and bottom. Use a spiralizer to cut your zucchini into zoodles. Set aside. 
  2. Place olive oil and pancetta into a large pan on medium heat. Cook pancetta until it gets golden and crispy. Add garlic and stir frequently so the garlic doesn't burn. 
  3. While pancetta is cooking whisk eggs and then add Parmesan and mix well. Set aside. 
  4. Add the zucchini to the pancetta and cook stirring for a minute. 
  5. Boil 1/4 cup of water and let cool for a couple of minutes. Slowly add to the eggs that have been whisked to temper the eggs. Whisk in the cheese.
  6. Remove pan from heat and drizzle in the egg and parmesan mixture while mixing. Mix really well so that the sauce covers the zoodles completely. 
  7. Cover pan and let stand for about five minutes.

My favorite by far was the Fuji Fuji. It has so much glitter in it that really coats the nail. It looks like I just dipped my nails in some really cool glitter. The toddler loved my Fuji Fuji nails so much that she kept grabbing my hands and saying "So Pretty!" My daughter LOVES glitter :) I was excited to try them because I love how smoothly they go on and how fast they dry. The only time I have to paint my nails is when the toddler is asleep for the night, so it's nice that these dry fast so that I can hop into bed myself once they are dry.

Gurin Rechargeable Water Flosser

I try to take care of my teeth now more so because I like to set good examples for my daughter. Whenever she sees me do something she wants to do it too so I have a very happy teeth-brusher. I have always had difficulty flossing with regular string floss so I have always used the stick flossers with disposable tips. Those have been getting harder and harder to find at my local drug store so I was happy to be able to review the Gurin Water Flosser.


I had a water flosser years ago that came with a huge compartment to fill with water. Then you had all these tubes that needed to be connected not to mention also having to plug it into the wall. Bathrooms in NYC are pretty small so it was really cumbersome. I love that the Gurin Water Flosser is rechargeable so I don't have to worry about plugging it in. I also love that the water goes right into the flosser and I don't have to worry about having a huge container to fill.


Even though it is so much smaller and compact it still is super powerful too. You get three different settings with soft, normal and pulse. I started off with the soft until I got used to the pressure and then moved on to the normal. The pulse is great for a gum massage too. It did take some getting used to. You have to make sure to keep it at a 90 degree angle and keep your mouth slightly open to let the water trickle out. The first few times I used it I had a pretty wet shirt and had difficulty getting the back teeth. After using it a few more times I got the hang of it and knew the right angle to get the back teeth without getting wet. After using it my teeth and mouth felt extremely clean and fresh.

How I Am Boosting My Chances of Conceiving Baby #2


Now that my little princess is officially 3 my husband and I have had the talk about baby #2. We both come from big families so we want to give her a sibling. My husband always wanted 3 or more children and I was always OK with 2. Since I am in my mid thirties and he is in his early forties we decided that the perfect time is now for baby #2.


We would always talk about having kids and what we would name them even as we were just dating. We got married and hoped for a honeymoon baby. Chimichurri Roast Beef Sandwich + Try the World Subscription Box

Try the World is a subscription box service that sends out boxes of food items in the theme of a country. Every two months you get to travel through foods of the specific country that has been hand selected by an expert chef. The box is full of 6-7 items that are staples of that country and a guide that gives information and even recipes to use the items right away.


I got to the sample the Buenos Aires, Argentina box that was chocked full of items I wanted to try all at once. First of all I loved how beautifully packed the box was. It came in a sweet teal box that was heavy duty and beautifully lined. I will be recycling the box as storage. I received the following items:








Everything was really delicious and I really enjoyed trying out the red wine and honey sauce with turkey tenderloin. I spread the Dulce De Leche onto the Sweet and Salty butter cookies and at was the prefect complement of sweet with a little bit of saltiness. I took chimichurri sauce and olive spead to create the sandwich below.

Chimichurri Roast Beef Sandwich
  • 1 brioche bun
  • 2 ounces roast beef
  • 1 ounce smoked gouda, sliced
  • 2 tblsp chimichurri sauce, more or less to taste
  • 1 tblsp olive spread
  1. Lightly heat up the roast beef by tossing it into a small pan. Turn off the heat and immediately add the sliced cheese to the top. Cover and let the cheese melt. 
  2. Spread the bun with the chimichurri sauce on both sides. Please the roast beef and gouda on top of the bottom side of the bun. 
  3. Top with olive spread and place bun on top.
