Preschooler Sliding Sight Word Reading Cards: Part 2


A few weeks ago I posted my Preschooler Sliding Sight Word Reading Cards. We are deep into homeschooling and using an amazing iPad program called Learn with Homer. I wanted to reinforce what she learned with the app so I created the sliding cards. It makes it easier for her to focus on one letter and one sound at a time and then she puts it together and reads it. I love this method of reading because she has become so independent with reading and doing the lessons herself.


Last week she went through a little stage of not wanting to do "Learning Time" so I just took out the cards whenever we had a free moment. I gave her a little break from new lessons and worked on getting the cards I made for her in the first round right. When I was confident that she knew these words we continued the lessons on the app. Here are second batch of words that she learned.

Sliding Sight Word Reading Cards 
Step 1: Download the template files and print out the files using the "fit to page" option.


Step 2: Cut out the letter strips and set aside. Cut out the slider on the solid black lines.


Step 3: Fold over on the dashed lines. Put a little bit of glue on the folded sides and then place the rectangle part on top carefully lining it up. Press down firmly and allow to dry for at least an hour before using.

Step 4: Insert one letter strip and show the child how to pull out the letters one by one and help them sound it out.

Keto / Low Carb BBQ and Slaw Pork Sandwich


After making my delicious Chipotle Crispy Skinned Pernil I had a lot of leftovers. It is so good just reheated but I wanted to try it a different way. Whenever I think of pork I think about this yummy pulled pork sandwich I have at a place in the city called Dinosaur BBQ. I decided to take my pork and create my take on the sandwich while making it low carb.

Ingredients
  • 2 eggs
  • 2 ounces cream cheese
  • 1/4 tsp cream of tartar
  • sesame seeds
  • 4-6 ounces cooked and cubed pork shoulder
  • 1 tblsp Low Carb Barbecue Sauce
  • 1 1/2 cups coleslaw mix 
  • 1 tblsp mayo
  • 1 tblsp vinegar
  • 1 tblsp avocado oil (you can substitute any other oil)
  • 1 tsp sweetener of choice (I used Swerve) 
  • salt and pepper
Buns
  1. Preheat oven to 325 degrees.
  2. Separate the eggs and beat the egg whites with cream of tartar until they form stiff peaks. Set aside.
  3. Beat the egg yolks and cream cheese until smooth. Carefully fold into the egg whites.
  4. Grease a muffin top pan (aka whoppie pan) and divide the mix into the 6 cups. 
  5. Sprinkle with sesame seeds and bake for 30 minutes in the middle rack. 
  6. Let cool on the baking sheets and then transfer to a ziplock bag. These keep really well in the refrigerator. 

Coleslaw
  1. Mix the mayo, vinegar, avocado oil, sweetener, salt and pepper. Add the coleslaw and mix until evenly coated. 
  2. Cover with some plastic wrap and place in refrigerator for at least one hour. It will taste better a day later. 

Assembly
  1. Heat up the pork until it has browned a little bit. Add the barbeque sauce and stir around until the sauce is heated through.
  2. Place a bun on your plate and top it with the bbq pork. Top the pork with some of the coleslaw. You should have some coleslaw leftover to enjoy later. Top with another bun. 

Fall Weight Loss: Week 13


I lost 1.4 pounds for a total weight loss of 35 pounds. I did my monthly measurements and I loss a little under 10 inches for the month of November.

I am so happy to say that this is the first time I didn't cheat on a major eating holiday. I stayed on my eating plan this week and only went out to eat for two dinner's. I have been doing well with planning ahead and making more servings of dinner to eat leftovers the next day. This has helped since I have to sometimes make nine different meals for my husband, daughter and I in one day! It helps to cook less by eating leftovers. For Thanksgiving Day my mother-in-law made turkey and then I made my low carb mash, low carb mac and cheese, brussels sprouts and low carb pumpkin cheesecake. I was so full and so satisfied and stayed on plan. 


I went out walking six days this week and took really long walks. I am really enjoying taking my daughter on longer and longer walks. I always worry that she will complain that she is tired but she hasn't yet. We had some really nice days this week so with her cousins over from Thanksgiving break we took them to the park a few times this week too. My in-laws stayed over my house for a few days out of the week so I didn't get to go to the gym at all. On Saturday it was cold and rainy so I didn't plan on walking. Then my daughter asked if we were going on a walk and I told her "later" hoping she'd forget. Once I said "later" she said "Yay, I love walking with my mommy!". Once she said that it motivated me to walk so the sneakers and jackets came out. We walked in the rain and she loved it! Sunday we took a family walk as the husband joined us on his day off.


  • Take vitamins and probiotics.
  • Get in 8000 daily steps. 
  • Strength training workouts at least 4 times this week. 
  • Go to gym at least 3 days this week.
  • Plan whole week of meals including leftovers.
