Real Medleys, Granola & Yogurt Blend Shortbread Cookie Sandwiches

This summer has been jam packed with different activities and events for us. Since I take the train and bus a lot to the city or across town I have so leave super early. Most of those days I don't have time to make breakfast so when I saw the Quaker® Real Medleys® Yogurt Cups while I was shopping at Walmart, I knew I had to stock up. The Real Medleys® yogurt cups are a shelf stable yogurt with chunks of granola and fruit. All you have to do is stir in some cold milk and in a minute you will have a Crunchy, Cool, Yum -filled yogurt cup.




Now when I know I will be leaving the house early, like when I take my toddler to soccer, I just throw a couple of cups into a bag the night before and fill my thermos with ice cold milk and set it in the fridge. The next morning we shower, dress and I throw my bag over my shoulder, pick up my thermos and out we go.


After tasting the delicious Strawberry Almond flavor I got the idea to make shortbread sandwich cookies filled with the Real Medleys® Yogurt.

I used the Classic Shortbread recipe from Jo Cooks baked them ahead of time and allowed them to completely cool. Then take your Quaker® Real Medleys® Yogurt Cup and add cold milk a little below the fill line. Mix and allow to thicken for a couple of minutes. Place half of the shortbread cookies onto a plate and flip. Add a couple of tablespoons of the Real Medleys® Yogurt on top of the cookie. Carefully top with another cookie.
