First Time Mom and Losing It

I don't know about you but I am always running out of essentials like toothpaste and razors. I always have to run to the drug store last minute and pay a big price for something not on sale. Before baby and my weight loss journey I had the time to sit down and make lists and look at sales and coupons.

Now that my daughter is a pro at the park I love taking her to different parks. I don't want her to get used to just one park so I always research and ask around at my daughter's play group to get ideas of different places and activities to take her to. When my husband is off we will just get in the car and drive over to parks in different towns that are 15, 20 and even 30 minutes away or more.

I don't drive myself so when my husband is at home I tend to stay close to home or go to places that are a few stops away on public transportation. I started running out of new places to take my daughter so when I heard about the new Yuggler app I was super impressed.

Months ago I didn't really eat beef or pork because of the fat content and calories. Now that I am low carb I am up for trying different cuts of meat, especially beef. I never really knew what kinds of beef to buy because I used to just get what I knew growing up. It was always those thin minute steaks that my mom would make with vinegar, onions and pepper (bistec encebollado).

I got an amazing opportunity to sample three items of my choice from Certified Steak and Seafood Company so I went with cuts I have never cooked before. I got a NY Strip, Beef Short Ribs and T-
Bone Steak. It was a bit hard picking just the right combo of meats because they had so many different ones to chose from. Not to mention some amazing seafood too!


When my order came a few days later I was curious to see how it was packaged and shipped. First I unwrapped the plastic and then I opened the top of the cooler. Inside was a bag of dry ice that was carefully sealed, had instructions right on top and a handle to easily take out. I have seen my share of cooking shows that say how you can get burned from dry ice so I could appreciate the extent of safety they went through. Then below the dry ice was my three beautiful cuts of beef.


I decided to tackle the New York Strip first and this is how I cooked it:

Perfect NY Strip

• New York Strip
• 1 tsp garlic powder
• 1 tsp paprika
• 1 tsp salt
• 1 tsp ground black pepper
• 1 tsp dried oregano
• 1 tblsp butter

It has been two weeks on the Atkins 40 plan and I am still going strong! I really enjoy the foods that I can eat so it doesn't even feel like I am on a diet. I really love my eggs and bacon in the morning and salads and lean protein in the afternoon. This week I lost 3.6 pounds for a total of 7 pounds lost on the Atkins plan.
