March Favorites


Sukrin Products - Sukrin products have opened the door to so many more possibilities with low carb recipes. I have replaced the honey in the recipe for my Sesame Wings with the Sukrin Fiber Gold Syrup. I have made some delicious low carb chocolate chip cookies with the Sukrin Gold and will soon be making a buttercream frosting for my chocolate mug cakes. With products like these it is so easy to have whatever you want to eat by just replacing a few ingredients.


Starbucks Coffee - I have become obsessed with Starbucks Coffee! I didn't have a nearby Starbucks until about 2 years ago so I always went to Dunkin Donuts. When the Starbucks did come to my neighborhood I was always intimidated by the menu and just thought I wouldn't be able to order what I wanted with all of the Starbucks lingo. I finally went in and had my first sugar-free iced coffee and it was delicious! Now that the weather is nicer and I take walks almost everyday with my daughter I stop by my Starbucks before going to the park for a unsweetened iced coffee with sugar-free caramel and sugar-free vanilla with heavy cream.


Batch Cooking - I have finally jumped on the bandwagon with batch cooking to make it easier on myself. Since we eat a keto diet I have to make everything from scratch from bone broth to barbecue sauce to "breads". Now I take the weekends or any day I have off from exercise to do most of the food items that we need for the week. It is so easy to stay on plan when you are prepared with a fridge and freezer full of keto food.


Under Bed Bin - Under my bed I keep a bin full of clothes that are too small for me. I have accumulated clothes of all sizes because I always buy without trying it on first. I also have clothes from all of my different sizes throughout the years. I put the clothes in by smallest size in the bottom and bigger sizes on top. Every few weeks I go into the bin and try on clothes. Last week I went in and fit into more than half of the bin. It is such an amazing feeling when you finally fit into something you have been wanting to wear.


Lily's Coconut Chocolate Bar - Last month my chocolate obsession was the Coco Polo bars and this month it's the Lily's. The Coco Polo bars are good but so expensive and I have any seen them at Fairway Market. While browsing my local Whole Foods I saw a huge assortment of Lily's Chocolate Bars and bought a few since they were on sale. The coconut tastes a lot like a Mounds bar which was one of my favorites before this way of eating.

Weight Loss Journey: Week 30


I lost 0.6 pounds for a total weight loss of 65 pounds. I was pleasantly surprised that I lost weight this week. I was expecting to gain weight since I went way over my carbs at Easter dinner.



I did really well the whole week and had an appetite for three meals almost everyday. I kept the bulletproof coffee to only a couple of times this week so I could eat a regular breakfast the other days. I have been really enjoying spinach salads lately for lunch and dinner. Spinach has a lot more nutrients and fiber than lettuce so I have been making the swap from regular lettuce. I was going back and forth on whether I was going to have a cheat meal or not on Easter Sunday. I really didn't want to because weigh in was the next day but it was hard not too with all the peer pressure. We went to an Italian restaurant so I had to search really good to find something low carb. I decided on Steak Pizzaiola which was steak topped with onions, peppers and a light tomato sauce. I substituted the pasta side dish for a caesar salad and gave the croutons to my sister. I did have some fried calamari that was breaded and had a stick of foccacia bread. 




I was very active this week. I completed the four workouts of the FeFit program for the week and was surprised at how well I did all of the exercises. I definitely feel stronger and more flexible than when I first started doing the exercise program. I doubled up my exercise on Thursday so that I can have Friday to Sunday free to spend when my family. Both workouts on Thursday were pretty tough so on Friday I was really sore. We went to the park a few times this week and even held our #DisneyKids Preschool Playdate at the park.

My daughter loves to sing and the Disney Princess songs are her favorite to sing to. She has seen so many YouTube videos of the princesses singing that she has memorized most of the songs. She can also tell right away which princess sang what song. She loves to do her little dance while she sings all of the songs. She was using this plastic microphone to sing into and perform so I thought it would be the perfect time to upgrade. 
When we went to the LegoLand in Texas they had a cute microphone and stand set up and my daughter loved it! She could have stayed there the whole time we were visiting so I thought the Little Virtuoso's Pink Idol Maker microphone was the perfect toy for her. 
I love that you can connect it to an MP3 player or even your smartphone. It is so easy to just find a song on YouTube and have it come out of the microphone. It is as simple as plugging in the microphone to the headphone jack. Then you just turn it on and the music starts playing through the microphone. 
The microphone stand is adjustable so that it can be used with kids of all heights. My daughter is 3 and my nephew who is 6 could easily use it too. The microphone is also detachable so that my daughter could dance around and do her little twirls.

Our #DisneyKids Preschool Play Date


Since the weather has been getting warmer these past couple of weeks we decided a week ago to have the #DisneyKids Preschool Play Date at the park. Unfortunately the weather wasn't as warm as we would have liked when the day came but we bundled up and had fun anyway. We found a big picnic table and set out all of the cute Mickey and friends decorations. We scattered the Animal Kingdom little animals around the table for the kids to play with.


Since it was a quick and active play date we decided to do snacks and chocolate milk for the food. The kids loved the cute little Cars sandwich bags we got and I filled them with cookies, teddy grahams and goldfish. They kids had fun picking the bags by whichever character they liked the best. While the kids were busy eating their snacks my sister took the little animals and hid them in the grass and the trees at the park. We told the kids the animals were missing and they had to help find them. It was fun seeing them proudly find each and every one of them.




It was too windy to play any of the games we got in the hostess party pack so we decided to play Disney Charades. We had each kid think up a character and act it out while the others guessed. It was hilarious and I was amazed at how much everyone knew about a lot of the Disney characters.

We ended the day giving everyone their Disney Junior book bags with little Disney surprises inside. We let the kids divide the little animals amongst themselves for an extra treat. The kids loved the map that was rolled up and had fun looking and naming all of the little Disney character shadows in the back. The adults showed the kids the map and named everything for them. We started planning on where they wanted to go first when they went to Walt Disneyland.



It was so much fun and it was nice to be outside and active. We will be saving the fun games that came in the hostess kit for a later playdate.

Keto Test Recipe: Low Carb Biscuits


When I first began my keto journey I was eating lots of eggs, cheese and bacon for breakfast. I was getting tired of eating the same thing so I started researching recipes for something bready I could have as a breakfast sandwich. I found these yummy almond flour mug cakes that I was eating for a while. It was kind of dry so then I started using my oopsie rolls for the "bread" of my sandwich. I wanted something denser so I looked for a biscuit type recipe.


I am a huge fan of the Cooking Keto with Kristie YouTube channel so I had to try her Low Carb Biscuits. The first time I made them they were a hit with my husband and I. I love how easy they are to make and that I could make a batch of twelve at one time.

The recipe is so simple and if you have read my Keto Pantry post you should already be familiar with the ingredients. First you have to take 10 egg whites and froth them up in a big bowl with a hand mixer. I was using a whole container of egg whites to make it easier on myself. Then my local Aldi's never had the carton so I was just separating 10 egg and saving the yolks for a later time.


To make my batter extra smooth I take all of the dry ingredients and put them through a sifter. What ever stays in the sifter I put in my ninja and pulverize it until it is fine. I add that to the rest of the dry ingredients and then mix it into the eggs with the hand mixer. Next to go in is the melted butter and then I fold in the mozzarella cheese.

Evenly divide the batter into a silicone muffin pan and bake for 12 minutes. The biscuits come out golden, dense and crumbly like a biscuit. I love to slice them in half spread on some butter and use them to dip into my sunny side up eggs.


What I Ate Wednesday: Week 29


Breakfast: I don't have an appetite in the morning so I will usually just have some bulletproof coffee. When I go out it's iced coffee from Dunkin Donuts or Starbucks. Lately I have been visiting my local Starbucks and having an unsweetened iced coffee with some sugar-free vanilla syrup and sugar-free caramel syrup. I have it with heavy whipping cream so it keeps me full until 2pm-4pm where I will usually have some lunch.  I like to go out for walks with my daughter early in the morning to beat the after school crowd. The Starbucks is super convenient for me to go to since it is on the way to the park.


Lunch: I have been having breakfast for lunch lately. I take the premium pork breakfast sausage roll from Aldi and split it into two ounce servings. I put each serving in a small plastic baggie and freeze them until I am ready to use them. At night I will take one of the packets from the freezer and put it in the fridge to eat the next day. For my breakfast-lunch I had a serving of sausage and pan fried it. I cooked an egg in the grease left over from the sausage. I also had a low carb biscuit on the side to dip into my egg that I added some reduced sugar ketchup to.


Dinner: One of my favorite things to eat out is from a Puerto Rican restaurant and it's Pernil (pork shoulder) and aguacate (avocado). My husband got me a large order so I ate half of it yesterday and the other half today. I decided to make some cauliflower tortillas to go with it and have it with the leftover avocado, salsa verde and sour cream. The tortillas were ok but at 4g of carb per tortilla it was a bit high for me for that size.


Snacks: I just had a couple of squares of coconut flavored Lily's chocolate bar. It tastes just like a Mounds chocolate bar. I ate a quarter of the bar and it was so satisfying.


Weight Loss Journey: Week 29



I lost 0.8 pounds for a total weight loss of 64.4 pounds.

I stayed on plan again this week even though I went out almost everyday. I started my days off at Starbucks. I have been obsessed with their iced coffee lately and since I have one on the way to the park I thought I would treat myself. I make sure the iced coffee is unsweetened and then have them add a few pumps of sugar free vanilla and sugar free caramel. I didn't eat breakfast this week because I didn't get hungry until after 2pm. I started eating breakfast for lunch and enjoyed lots of eggs and low carb biscuits with sausage. We ordered out a couple of times for dinner and had my favorite, pernil (pork shoulder) and avocado. 



I went out a lot this week so I didn't really focus on doing exercise at home. I took long walks most of the days in the week and had lots of fun with my daughter at the park. She wanted to chase after me and I actually had the energy to do it. Once a 3 year old finds something fun you are expected to do it over and over so I was happy I could keep up with her. I didn't feel winded or have any aches or pains while running or even after we finished. I totally surprised myself when I climbed the ladders at the jungle gyms and hopped down a few times. It was just fun being a kid with my daughter and she really enjoyed having a silly mom this week. On the weekend the weather got quite a bit colder so we stayed in and I caught up on my FeFit Workouts. I did two on Saturday and one on Sunday to complete this week's plan.

Straightening My Hair with Diamonds!

Now that I am down 65 pounds I have a lot more confidence and go out a lot more. My hair is long so I used to always keep it in a bun. Now that I like to go out and dress up I have been straightening my naturally frizzy and wavy hair. Cute & Easy Easter Ideas for Preschoolers


I can not say enough how much we love to celebrate the holidays. Things are so much more fun when you have a child that truly enjoys getting treated extra special. Our holidays always starts with a special breakfast, something fun to wear in our hair and something fun on our t-shirts. Later on we will have a festive snack and then for Easter, the opening of the baskets starts.

I love starting every holiday with a festive breakfast. It almost always includes a decorated pancake. I thought it would be fun to bake the pancakes in the oven using these silicone egg shaped trays. We added fresh strawberry puree to make the pancake eggs pink and then drizzled on some melted white chocolate. My daughter had fun decorating the pancake eggs with Easter sprinkles and candy.


We always dress for the holiday and the easiest way is to decorate a t-shirt. I love using wax paper as stencils to quickly paint on a cute design. You can do a search for whatever you want and the word "stencil" and the possibilities are endless. Since my daughter loves glitter I decided to use glitter glue and glitter in place of the fabric paint. A cute little pompom completed the design.


To go along with the shirt I made a super simple bunny ear headband. I made the headband black so that it would blend in with my daughter's hair. She loved how fluffy they were. It was so comfortable that she left it on all day.


Every toddler & preschooler I know is obsessed with those Kinder surprise eggs. Since they are banned in the US I decided to make my own with some safe toys inside. It was amazingly easy to do and my preschooler thought they were the real thing.


Since my daughter is old enough to craft with me she helped me decorate some pudding cups. We made them look like little girls dressed in Easter dresses.
