As the weather is getting nice and warm I decided to take out my pop maker and create a healthy tropical pop with some matcha in it.
I love matcha because of the many health benefits. It is high in antioxidant, helps with your complexion and is said to be a metabolism booster. I have tried green tea matcha so I was super curious when I got to try the White Matcha from Red Leaf Tea. White Matcha is a lot milder in taste and has sort of a floral taste. If you don't like the grassy-ness strong taste of green matcha you may like the taste of the White Matcha better.
Pineapple Coconut Matcha Yogurt Pops
- 1/4 cup water
- 1 tsp White Matcha
- 1 cup almond coconut milk (you can also use coconut milk)
- 1/2 cup plain Greek yogurt
- 1/4 cup pineapple
- 1 tblsp coconut oil
- 6 drops of liquid Stevia (you can also use honey or agave nectar to your taste)
- Boil water. Place matcha into a mug and pour boiling water over and mix well.
- Place all of the ingredients into a small blender and blend until smooth.
- Carefully pour into pop maker and freeze.
Makes 8 pops.

You can also use the white matcha in a yummy latte! Just boil 1/4 cup of water. Add 1 tsp of white match to a mug. Pour water over. Heat up some almond milk and pour into mug with matcha water. Stir and enjoy.
