Low Carb / Keto Breakfast Cheese "Tostadas"


I was happy that I got to eat eggs, butter and bacon for breakfast on a keto diet. After a few days of that it can get boring. I started alternating with Bullet Proof Coffee which is a great way to get fats and energy in the morning. To alternate with my Bullet Proof Coffee I came up with a different way to eat my eggs in the morning. I was craving Mexican style eggs with tortillas so I made cheese tostadas to swap with the tortillas. To make the cheese tostadas I used the same method I created to make my cheese cups. Instead of molding them on cupcake tins I just let them set up flat.


To swap for my everyday bacon I took a link of chorizo and sliced them into coins and then cooked them until golden and crispy. I took out the chorizo and drained it onto a paper towel. I tossed the excess oil from the frying pan and just left a coat of it on the pan to cook the eggs. To make the eggs I took two whole eggs and whipped them with one thinly sliced scallion. Then I added eggs to the pan and made them into a fluffy scramble. I cubed up fresh avocado and took out my sour cream. Put everything on top the the tostadas and enjoy!


Keto Breakfast Cheese "Tostadas" (Print Recipe)
  • 1 1/2 ounce shredded cheddar cheese
  • 1 link Goya chorizo (my brand of choice but you can use any)
  • 2 eggs
  • 1 scallion, thinly sliced
  • 1/2 small Hass avocado
  • 1 tblsp sour cream
  1. For my method for the Cheese Cups to make the tostadas. Let them set flat while you make the rest of the recipe. 
  2. Slice the chorizo into coins and fry until it is golden. Take out of the pain and drain on a paper towel. Dump out the oil set aside to cook the eggs. 
  3. Whisk the two eggs and add the scallions. Mix well. Add to pan you used to cook the chorizo and scramble until they are cooked and fluffy. 
  4. To assemble, place the tostadas on a plate and top with scrambled eggs, chorizo, avocado and sour cream.

My daughter will be starting PreK next year so I want to her to get started on having a morning routine. Sometimes we have early schedules and events to go to and it can be stressful when my little one can't get herself ready. I created little flip cards with pictures so that she can help get ready herself and know what to do.

First we went to Walmart to pick up a cute book bag, ribbon, hole puncher, some super easy breakfast from Jimmy Dean® and after school snacks from  State Fair® .


To make the cards, print cards 1 and cards 2. I printed them onto card stock and laminated them so that they are extra durable for toddler hands. I then stacked them together and punched a hole in the corner. Tie a piece of ribbon through and have your toddler flip over each card as they get completed. Since my daughter is only three I still have to help her do almost every card but it does help when she knows what she is supposed to do next.



Though I don't have time to make a delicious and time consuming Latin breakfast like my mom used to do, I always make sure to have some avena fresca in the fridge for the morning. I just add oatmeal, milk, water, a little sweetener and cinnamon in the blender and blend until smooth. I keep it in the fridge over night and enjoy it with my daughter in the morning. To go with the avena fresca we have a delicious and fast breakfast from Jimmy Dean®. My daughter loves the Pancakes and Sausage on a stick and I love that I can just throw them in the microwave for a couple of minutes. I like to serve a little cup of maple syrup for her to dip herself. It's fast to make and easy for her to eat without making a big mess and without me having a load of dishes. Because they are from Jimmy Dean® I know I am getting a satisfying and high quality breakfast that is a perfect way to start your morning.



When we come back from our events, play dates or sports I always have some State Fair® Corn Dogs in the freezer to snack on. My daughter loves them a little crisp so as soon as we get home I pop it in the oven. By the time we settle down, change our clothes and put away any left over messes the protein packed corn dogs with the honey-sweetened cornbread batter is ready to eat.

How I Became a Breakfast Eater with Special K® Red Berries

I was never a big breakfast eater when I was younger. I would usually eat whatever sugary kid cereal we had at home right before school. I remember getting up in the morning with just enough time to get dressed, eat cereal, get my book bag and go out the door to take the city bus. Then when I was in college I didn't eat breakfast at all. I had early morning classes that I would always rush to.


When I got my first big job as a teacher I continued on with not eating breakfast and then eating whatever frozen meal I had in my little refrigerator in my room for lunch. I was always ravenous when I got home after work and would always eat a big snack before dinner.


When I started on my weight loss journeys and researched on how to best do it, eating breakfast was always on top of the list to be successful. Eating breakfast gave me energy throughout the day and also curbed snacking throughout the day. I would keep track of all of the macro-nutrients I was supposed to eat for the day and could never make the numbers until I started eating my Special K® cereals for breakfast.


Special K® cereals are a good source of fiber, made with whole grains and no high-fructose corn syrup. It is also a great source of Vitamin D and Folate which are especially important for women. Easter Egg Strawberry and White Chocolate Drizzle Pancakes


I love making my daughter a special breakfast on any holiday like my heart and love shaped pancakes. Since I got those silicone egg molds to make my DIY Kinder Surprise Eggs, I decided to put them to use again and make some pancakes out of them.


I wanted the eggs to be pink so I took about 3/4 cup of chopped fresh strawberries and placed it into my mini blender and blended away until I got a nice puree. I took some cheesecloth and placed it into a strainer and poured the puree through to catch all of the seeds and chunky bits.

Since I used a complete pancake mix I used two thirds of the strawberry puree and one third water for the liquid. My box instructions called for 3/4 cup of water so I added 1/2 cup of strawberry puree and 1/4 cup of water. Mix and let the pancake batter rest for at least 5 minutes.


Take the silicone mold and place onto a metal sheet pan. Spray the egg molds with some oil and pour the strawberry pancake batter in. Place in the oven at 350 degrees and cook until the pancakes are cooked through. Mine took about 25 minutes.


While the pancake eggs are cooking I melted about 1/2 cup of white chocolate chips. Place the melted chocolate into a plastic baggie and cut the tip of one of the corners. Take the pancake eggs out of the oven and let cool slightly for about 5 minutes. Pop out the egg pancakes out of the mold and place flat side down on a plate. Drizzle the chocolate on top to decorate the pancakes like an Easter egg. Add some Easter sprinkles and bunny and carrot candies. (optional)




Sprinkle some unsweetened coconut flakes to the bottom of the plate and place the eggs on top to serve.


Delicious and Important Breakfast Choices on the Atkins 40


I was always the type of person that didn't like to eat breakfast in the morning. I would get up, get ready for work and get to work just on time. As a former teacher whenever I would have a free period I would hit the snack machine or the snack drawer at my desk. Then I would have whatever frozen meal I had in my mini-fridge that would still leave me hungry. I would get home by 3:30 and then I would snack and graze on unhealthy options before it was dinner time. It was a cycle that kept going on and on until I learned the importance of breakfast.

Eating a healthy breakfast really sets yourself up to have a good day. It starts you on the right foot and gives you enough satisfaction and energy to get you going during the day. I now know how important it is to stay low carb to not get those sugar spikes that eventually tire you out and to also eat some good fat to keep you satiated until snack time and then lunch.


Before starting this Atkins journey I thought it was all about bacon and eggs for breakfast. Though bacon and eggs are delicious I couldn't imagine eating the same thing everyday. I love that with with Atkins 40 you can eat things like oatmeal, fruit and Greek yogurt. I love having some oatmeal with berries or some Greek yogurt with some nuts like a parfait.


I have also started with low carb baking and made a delicious low carb pumpkin muffin that I had with a Atkins chocolate shake that packed a whopping 20 grams of protein! (Review of the Atkins shakes coming soon!)

When I don't have time to make breakfast I love that Atkins solves that problem too! They have different varieties of frozen breakfast sandwiches that you just pop in the microwave. All you have to do is take it out of the plastic, wrap it in a paper towel and microwave it for a minute and a half. That's it!



I have tried other light frozen breakfast sandwiches many months ago and found them to be super dry. The Atkins ones are so moist, buttery and flavorful. The best thing about them is that you get to eat a yummy English muffin while only consuming 5 net carbs! Super Green Super Healthy Breakfast Sandwich


Before the start of my weight loss journey my breakfast sandwiches consisted of bacon, egg and cheese on a buttered bagel. Now instead of butter I use avocado and instead of bacon I use turkey sausage. The healthy fat from the avocado keeps me satisfied until lunchtime!

Super Green Super Healthy Breakfast Sandwich
  • 1/2 small Hass avocado
  • 1 turkey sausage patty
  • 1 egg
  • handful of fresh baby spinach, washed
  • light multi-grain English muffin
  1. Toast English muffin.
  2. Cook turkey sausage until it is fully done and remove from pan.
  3. Add spinach to the same pan you cooked the sausage in and cook until wilted.
  4. Remove the spinach and cook the egg to your liking. 
  5. While egg is cooking peel avocado and mash with a fork. 
  6. Spread avocado on both sides of toasted English muffin. 
  7. Add spinach, sausage and egg and top with remaining English muffin.
