Saint Patrick's Day Cabbage and Ham Steaks

I love eating cabbage and love the fact that it is one of the vegetables lower in carbs. You can eat one cup of cabbage for about 2.2 net carbs. One cup of cabbage is very filling and the perfect accompaniment to a lean meat.

I always had cabbage boiled with potatoes and ham the way my mom used to make it. Then I started making vinegary slaws to put on top of fish. I wanted to try something new so I finally attempted to make the cabbage steaks that I saw on the Dr. Oz show. It is super simple to make and I was curious to find out how roasted cabbage would taste.

First I took off the top bruised leaves of the cabbage. I sliced the cabbage into 1/2" thick steaks and brushed them with some olive oil. Then I sprinkled some salt, pepper and garlic powder on top and roasted in a 400 degree oven for about 30 minutes.

In the spirit of Saint Patrick's Day I decided to pair the cabbage with some ham steaks. All I did was rub some minced garlic and oregano with olive oil and placed it in the oven with the cabbage.

Cabbage and Ham Steaks
  • 1 small cabbage
  • 1 tsp of olive oil, separated
  • salt, pepper and garlic powder, to taste
  • 1 ham steak
  • 1 clove garlic
  • 1/2 tsp dried oregano
  1. Remove outer leaves from cabbage and slice into 1/2" steaks. Brush olive oil on cabbage and sprinkle with salt, pepper, and garlic powder. Place on a baking pan and place in oven.
  2. Crush garlic clove, dried oregano and salt and pepper into a paste with the remaining olive oil. Rub onto the top of the steak and place on another baking pan. Place in oven.
  3. Roast cabbage and ham in a 400 degree oven for 30 minutes.
