Sneaky Veggie Filled Tomato Sauce and Penne for Kids


A great Mother's Day present would be to have dinner ready quick and easy and something the toddler wouldn't fight to eat. She does love her pasta and tomato sauce so I started getting sneaky and adding some diced veggies to my homemade tomato sauce. As soon as my toddler spotted the diced green peppers she told me this is "yucky" and started picking everything out of her pasta bowl.

First I went to Walmart to pick up some veggies, cans of tomato sauce and Barilla® Penne. After trying to dice the veggies smaller and it took too long, I decided to dump everything into my food processor and pulse away. I added carrots, peppers, mushrooms and onions and pulsed until it was very finely chopped. Since the vegetables were chopped so finely it released a lot of liquid so I placed the veggies on top of a flour sack towel and squeezed all the moisture away.


After the veggies were dry, I added them to a hot sauce pan with olive oil and some minced garlic. I stirred the veggies until they were softened. Then I added a can of crushed tomatoes and a can of tomato paste. I added some seasonings and stirred on low heat for about 15 minutes. I let the veggie tomato sauce cool and put it into a mason jar to have for the week and some portioned out into ziplock bags in the freezer.


I love having Barilla® pasta on hand at all times because it is one of the few things my daughter will eat without a fight. She loves the penne pasta because she can easily eat it all by herself like a "big girl" I love it because it is super easy to do and with my prepared sauce it takes just minutes for dinner to be done.


Sneaky Veggie Filled Tomato Sauce and Penne (Printable Recipe)
  • 1 box of Barilla® Penne
  • 2 carrots
  • 1 small onion
  • 8 button mushrooms
  • 1 green pepper
  • 1 tblsp olive oil
  • 1 large can of crushed tomatoes
  • 1 small can tomato paste
  • 1 tblsp dried oregano
  • 1/2 tblsp dried basil 
  • 1/2 tblsp onion powder
  • 1/2 tblsp garlic powder
  1. Roughly chop the vegetables and place into a food processor. Pulse until finely chopped. Place the vegetables on top of a flour sack towel and bring up the sides. Twist all of the liquid out of the vegetables. 
  2. Heat a large saucepan with the olive oil and add the drained vegetables. Stir until the vegetables are softened. 
  3. Add the crushed tomatoes and the tomato paste and stir. Add the herbs and seasonings and stir frequently for about 15 minutes. 
  4. Cook the  Barilla® Penne according to the instructions on the box.

Mother's Day Spaghetti with Chicken and Spicy Tomato Sauce


My sister, mom and I always celebrate Mother's Day by cooking together and eating at home. We usually take turns on who will be the main cook and this year it's my turn. My mom and sister will be coming over to my house while we turn up the music, get comfortable and start cooking.

We wanted to eat something quick, easy and yummy so we decided to opt for our favorite spaghetti from Barilla®. I wanted to try the spaghetti with chicken and spicy tomato sauce because my mom loves spicy food. I was thrilled that I got it so easy this year because I found all of the ingredients at my local Walmart. Plus, who doesn't love cooking spaghetti as a quick, easy dinner?


First I took the chicken and cut it up into bite sized pieces. I took out a large pan and added some olive oil to heat up. I added the chicken and jalapeno and let it brown. Next I added some white wine and allowed it to reduce for a little bit. Next came in the can of crushed tomatoes, some salt and other seasonings like pepper and oregano. While all of the chicken, flavors and tomatoes where cooking together I boiled a pot of water and then added my Barilla® spaghetti to cook. Once the spaghetti was cooked I drained it and added it to the spicy chicken tomato sauce and let it mix and cook together for a couple of minutes.  Lastly I drizzled in some olive oil and added some Cotija cheese.


It was nice to not have to be in a hot kitchen for a long time or even turn on the oven. I got to sit and chat and laugh with my mom and sister and dinner was ready in less than half an hour.


Barilla® Spaghetti with Chicken and Spicy Tomato Sauce (printable recipe)
  • 1 box Barilla® Spaghetti
  • 4 tblsp extra virgin olive oil
  • 4 chicken thighs, boneless, diced into 1/2-inch pieces
  • 1 tblsp fresh oregano, leaves only (I used 1 tsp dried)
  • 1 jalapeno pepper, or to taste
  • 1/2 cup white wine, dry
  • 2 pounds plum tomatoes, crushed (I used a can of crushed tomatoes)
  • Salt to taste
  • 1/2 cup Cotija cheese
  1. Place a pot of water to boil. 
  2. While pot is boiling, brown the chicken in a skillet with 1/2 of the olive oil, oregano and sliced jalapeno pepper. After one minute, stir in the wine and reduce to half. Add the crushed tomatoes and one cup of water. Season with salt and bring to boil. 
  3. Cook pasta according to directions, drain and toss with sauce. 
  4. Stir in the remaining olive oil and Cotija cheese.
