Low Carb Baked "Mac" n Cheese


Now that my husband and I have really embraced a low carb/keto way of life I am on the search for the best low carb recipes. I want to find low carb versions of our favorite meals so that we don't fall back into our old ways of eating. One of my favorite things to make for my husband or on any special occasion is my baked macaroni and cheese. It was simple to make with a few ingredients and tasted so delicious.

To recreate my baked macaroni and cheese recipe I replaced the macaroni with chopped steamed cauliflower and the evaporated milk with a heavy cream and water mixture. The rest of the ingredients were low carb so I didn't have to replace them.


First I took a 1/2 a head of cauliflower and chopped it into little trees and steamed them until they are almost tender. Place cauliflower into a cheesecloth and carefully squeeze out some moisture. Place onto a cutting board and cut into bite sized pieces. Place cauliflower into a large sauce pan and add a couple tablespoons of butter. Mix until melted. Whisk together an egg, 1/2 cup heavy cream and 1/2 cup water and 1/2 tsp salt. Pour in some of the egg/cream mixture and mix. Sprinkle in some cheese and mix until melted. Alternate between the two until they are used up . Pour it all into a baking dish and bake in a 350 degree oven from about 25 minutes. Enjoy!

  • 1/2 tsp salt
  • 1/2 cup heavy cream
  • 1/2 cup water
  • 1 egg
  • 2 cups shredded cheese
  1. Steam the cauliflower until it is are almost tender. Place cauliflower into a cheesecloth and carefully squeeze out some moisture. Place onto a cutting board and cut into bite sized pieces. 
  2. Place cauliflower into a large sauce pan and add the butter. Mix until melted. 
  3. Whisk together the egg, heavy cream, water and 1/2 tsp salt. 
  4. Pour in some of the egg/cream mixture and mix. Sprinkle in some cheese and mix until melted. Alternate between the two until they are both used up . 
  5. Pour it all into a baking dish and bake in a 350 degree oven from about 25 minutes.
