Keto / Low Carb Beef Tacos with Guacamole Cream


Crunchy tacos are one of my family's favorites and we had them at least once a week. Once we went keto those crunchy tacos turned into taco salads. I do love taco salads but missed the crunch from the shell. I found out how to make cheese crunchy tacos from a YouTube video and have been making them like this ever since.


Ingredients:
  • 6 ounces of 80% beef
  • 1/8 cup tomato sauce
  • 1/8 cup sofrito (frozen Spanish aisle)
  • 2 tblsp diced green pepper
  • salt, pepper, garlic powder to taste
  • 2 thick slices provolone cheese
  • 1/2 small rice Hass avocado
  • 1 tblsp green salsa (I use Herdez)
  • 1 tblsp sour cream
  • 1 tblsp fresh chopped cilantro
  • 1 tsp lemon juice 
  • 1 small clove garlic
Beef Mixture
Brown the beef with the green pepper and then add the tomato sauce, sofrito, and seasonings.  Allow the beef to simmer on low for 10 minutes.


Cheese Taco Shells:
Take a microwave safe plate and put some parchment paper on top. Place a slice of provolone cheese on top of the parchment paper and microwave for 1 minute. The cheese should be slightly browned. If it is not browned enough microwave it for 15 second intervals until you get a color like the picture below. Dab the excess oil off of the top of the cheese. Carefully lift up two sides of the parchment paper to form a taco shell shape. Hang over a bowl and allow to cool. Once cool carefully peel off parchment paper.



Guacamole Cream
Place the avocado, green salsa, sour cream, cilantro, lemon juice and garlic clove into a small blender like a Ninja. Process until creamy and smooth.


To assemble my taco I just put a big spoon of meat and a generous amount of guacamole cream on top. You can also add other low carb toppings like shredded lettuce, shredded cheese and sliced radishes.

  1. Hum my favorite toppings for tacos are sour cream, guacamole, chilis. I never thought of making a taco shell out of cheese--I think I might try that!
