Healthy Berry Chocolate Chip Ice Cream

Ice cream is one of my favorite treats. While I have been enjoying frozen pops as a dessert lately I have been craving a spoon of creamy delight. I just purchased a frozen fruit dessert maker and decided to have fun trying different recipes. This is what I came up with.

Healthy Berry Chocolate Chip Ice Cream

Ingredients:
  • 1/4 cup frozen blueberries
  • 1/2 cup frozen strawberries
  • 1 banana, sliced and frozen
  • 1/2 cup plain nonfat Greek yogurt
  • 1/4 tsp liquid stevia
  • 1/4 tsp vanilla extract
  • 1 tsp mini chocolate chips
Directions
  1. Mix yogurt, stevia and vanilla and pour into an ice cube tray. Freeze for about 2 hours.
  2. Alternate placing berries and yogurt cubes into dessert maker.
  3. Add most of the chocolate chips and fold in.
  4. Sprinkle the remaining chocolate chips on top.

  1. I will do this at home one of these days. But I was thinking of tweaking it a bit because I don't know where to find fresh berries here. I'm planning to tweak it a bit: mangoes and peaches might work.

  2. I'm not a big fan of Greek yogurt, but maybe I'll like it frozen like this. Sounds yummy.

  7. Oh wow, that looks delicious. I've got to be honest, I come from the "healthy usually tastes bad" camp, but I'm starting to see that with a little creativity, healthy can actually be delicious.

  15. This looks heavenly! I love berries and chocolate, and I've been trying to eat healthier. Stevia is awesome for sweetening naturally, and I use Greek yogurt all the time in smoothies.

  29. Do fruits come frozen or do you freeze your own fruit? Can you replace the Stevia for sugar? I might experiment a bit too. ;)
